Canned tuna is often on sale and so are packaged rice sides. When on special, it is easy to pick these up and store them in the pantry and it is hard to beat the pricing on these items! Adding broccoli, this tasty entree is effortless and satisfying!
1 - 5.7 ounce package of Cheddar Broccoli rice and pasta blend such as Rice Sides
2 - 5 ounce cans of tuna, drained (I like light tuna or even Albacore when it is on sale.)
1/4 teaspoon each black pepper and garlic powder
1 - 8 ounce package shredded sharp cheddar cheese
2 tablespoons grated parmesan
2 cups frozen broccoli florets (if using fresh broccoli, steam in the microwave for 1-2 minutes)
Prepare rice blend according to package directions except simmer for 2 minutes less than stated on directions. At that point, stir in tuna, black pepper, garlic powder, cheddar cheese, parmesan and broccoli. Bring back to a simmer and continue cooking until cheese is melted and rice is completely done, about 2-3 more minutes. Makes 4 Servings. Enjoy!
